AMAZING Rose Potatoes

These potatoes are impressive, delicious and yet so simple to make! Try them out for your next special occasion. It will elevate your meal and I promise you they will get devoured!

INGREDIENTS (makes 12 rose potatoes)


6 potatoes ~ try to get them all about the same size around

24 slices of bacon ~ thin cut

1 tbs Italian seasoning (or seasoning of choice)

6 tbs parmesan cheese

2 tsp garlic powder

2 tsp salt

2 tsp pepper

Parchment paper or long cutting board

Mandolin

DIRECTIONS


Preheat oven to 400 degrees.

Spray muffin pan with non stick cooking oil.

Wash potatoes, then with Mandolin slice the potatoes 1/8th inch thin and put into large mixing bowl.

Add garlic, Italian seasoning, salt, pepper and toss.

Add parmesan cheese and toss again.

Lay out parchment paper.

Lay 2 pieces of bacon out long ways, overlapping about 2 in. so that the bacon is about 20”-22” long. Layer the potatoes on the bacon overlapping the potatoes about a ½ in.

At one end, start to roll up the bacon/potatoes. Continue rolling and the potatoes will turn into a beautiful rose shape.

Place rose potato into muffin tin. Muffin tin will help keep the rose potato in its shape while baking. Continue with the rest of the bacon and potatoes.

Bake for approximately 45 minutes or until center is tender and outside layer is crispy.

Drizzle extra butter and/or parmesan after out of the oven, while still hot.

Rose potatoes will hold their shape after cooked.

Serve with your favorite main course!
