This cookie is the perfect combination of sweet and salty and it is so soft and chewy, it will melt in your mouth. I recommend this recipe for all occasions, especially when you want to be a bit different than the standard chocolate chip cookie or oatmeal raisin cookie.

INGREDIENTS

1 large ripe banana

½ C chunky peanut butter

½ C honey

1 tsp vanilla

1 C rolled oats

½ C flour or coconut flour

¼ tsp baking soda

¼ tsp salt

1 tsp cinnamon

½ C walnuts or raisins

DIRECTIONS

Preheat oven to 350 degrees. In large bowl, mash up banana thoroughly, add

all the other ingredients and mix well. Prepare a cookie sheet with parchment

paper, make 2 in. discs of cookie dough. Bake for 14-16 minutes
